Grilled Balsamic Zucchini

Grilled Balsamic

Smith’s Beef Slider

Yield: 2 1/2 LB | Cook Time: 4 minutes | Serving Size: 4| BBQ Charbroiler Temperature: 475 -525 F

INGREDIENTS:

  • 2 1/2 lb Zucchini sliced lenthwise
  • 1 cup Canola Oil
  • 1/3 cup Balsamic Vinegar
  • 1 oz Dry Roasted Garlic and Pepper Seasoning
  • 1/3 cup of Virgin Olive Oil
  • 2 Baguettes sliced 1/4” thick

 

DIRECTIONS:

  1. For the dressing, mix the balsamic vinegar, oil, and the roasted garlic and pepper seasoning whisking together to infuse all the flavours.
  2. Slice zucchini 1/8 ” thickness lengthwsie.
  3. Brush it with oil and set aside
  4. Pre heat BBQ Charbroiler to 475 F-525 F
  5. Broil zucchini till its cooked about a minute each side leaving grill marks on both sides.
  6. Remove from grill into a bowl.
  7. Drizzle the balsamic dressing onto the zucchini, mix all together and let it rest for 5 minutes absorbing all the flavours from the dressing.
  8. Serve grilled zucchini with a side of sliced baguette or any type of bread you like.

 

SPECIAL NOTE: Grilled zucchini can be served hot, warm, room temperature or cold so you can pre made the grilled zucchini days or hours before hand.
