Lemon Parmesan Fries


Grilled Maui Ribs

Yield: 1 Pound | Cook Time: 1 1/2 minutes | Serving Size: 2 | Deep Fryer Temperature: 375 F

INGREDIENTS:

  • 2 pcs. Russet Potato fresh (100ct).
  • 2 oz Red Onions fresh( thinly sliced)
  • 2 oz Zucchini fresh (matchsticks cut)
  • 1/2 pc. Egg (beaten)
  • 3 Tbsp All Purpose Flour
  • 1 oz Parmesan cheese (grated)
  • 1/2 pc Fresh Lemon (juice and rind)
  • 2 pinches of seasoning salt of your choice

 

DIRECTIONS:

  1. Cut potato in matchsticks size and soak potato in water to prevent browning.
  2. Also to release some of the natural sugars out of the potato that makes the fries dark and saggy when cooked.
  3. Mix the parmesan cheese, lemon juice and rind. Set aside till ready to use.
  4. Pre heat deep frier to 350 F
  5. Dry potato and blanch it for 20 seconds then on to a sheet pan to cool down and store till needed. Blanching can be done hours or days before the second final step of making the fries.
  6. Finishing the Lemon Parmesan Fries, coat the onions and the zucchini with the egg then dridge it with flour and drop it in the fryer along with the matchstick fries in a separate basket.
  7. Shake the basket once or twice to prevent sticking and to cook evenly.
  8. Cook time on both would be the same about a minute or till golden brown and crispy.
  9. Lift and let it drain out the excess oil then onto a bowl and season with seasoning salt followed immediately with the lemon parmesan mixture.
  10. Serve immediately as a stand alone or with your choice of dipping sauces such as Ketchup, Chipotle Mayo,Sriracha sauce, etc…
