Bacon Wrapped Potato


Bacon-Wrapped Potatoes

Yield: 1 | Cook Time: 35 minutes | Serving Size: 4 servings (four pieces each) | Oven: 350 F

INGREDIENTS:

  • 1 1/2 lbs white creamer potatoes (16 potatoes)
  • 2 oz. lemon juice
  • 2 tsp ground oregano
  • 1 cup chicken broth
  • 1 oz. seasoning salt
  • 1 tsp ground rosemary
  • 1 oz. salted butter
  • 1/2 oz. chopped garlic
  • 16 slices of bacon
  • 4 litres of oil for deep frying
  • 2 cups Tzatziki sauce for serving

 

DIRECTIONS:

  1. Preheat oven to 350 F.
  2. In a roasting pan, mix potatoes, lemon juice, oregano, chicken broth , seasoning salt, rosemary, butter and garlic. Cover roasting pan with foil and bake for 25 minutes or until tender and easily pierced with a toothpick. Allow to cool.
  3. Once cooled, wrap each potato with a slice of bacon, securing with toothpick at the end to prevent from unraveling.
  4. Pour oil in a deep fryer and preheat to 350 F.
  5. Deep fry potatoes for 1 1/2 minutes or until the bacon is cooked and golden brown in colour. Bacon will shrink as it cooks.
  6. Serve immediately with Tzatziki sauce,ranch, chipotle sauce or any dipping sauce of your choice.

Special Note: You can chill the finished bacon-wrapped potatoes and reheat in the oven later.
