Bacon-Wrapped Potatoes
Yield: 1 | Cook Time: 35 minutes | Serving Size: 4 servings (four pieces each) | Oven: 350 F
INGREDIENTS:
- 1 1/2 lbs white creamer potatoes (16 potatoes)
- 2 oz. lemon juice
- 2 tsp ground oregano
- 1 cup chicken broth
- 1 oz. seasoning salt
- 1 tsp ground rosemary
- 1 oz. salted butter
- 1/2 oz. chopped garlic
- 16 slices of bacon
- 4 litres of oil for deep frying
- 2 cups Tzatziki sauce for serving
DIRECTIONS:
- Preheat oven to 350 F.
- In a roasting pan, mix potatoes, lemon juice, oregano, chicken broth , seasoning salt, rosemary, butter and garlic. Cover roasting pan with foil and bake for 25 minutes or until tender and easily pierced with a toothpick. Allow to cool.
- Once cooled, wrap each potato with a slice of bacon, securing with toothpick at the end to prevent from unraveling.
- Pour oil in a deep fryer and preheat to 350 F.
- Deep fry potatoes for 1 1/2 minutes or until the bacon is cooked and golden brown in colour. Bacon will shrink as it cooks.
- Serve immediately with Tzatziki sauce,ranch, chipotle sauce or any dipping sauce of your choice.
Special Note: You can chill the finished bacon-wrapped potatoes and reheat in the oven later.
